Family Food Truck Business

I have had a passion and a dream for years of owning our own Family Food Truck Business and serving our community while making a decent living doing it. My family and I have talked at length about working together and they share this passion and dream with me.

My experience in the Food Industry includes working in an elementary school kitchen, multiple fast-food restaurants, being a night manager at Golden Chick, working at Cracker Barrel as a server and for On The Border as a Hostess and a Server. With my passion and experience, it’s a no-brainer that I should be involved in the Food Truck Industry!

Kayleigh started talking about wanting to find a part-time job to make some extra money, however, she is too young for a normal fast-food job and living in the small, rural town of Palmer, Texas, her other options for steady income babysitting and the like are limited!

That’s when I started thinking about ways we could work together so we could both earn some extra money. Since my job ended in February, things have gotten pretty tight to say the least, and I need a way to bring in an income without sacrificing my role as Kayleigh’s Learning Coach for her online schooling or valuable time with our family.

So, I began researching different options, including the Food Truck Industry, and I came across A Shaved Ice Opportunity with Snowie!

Snowie offers a business opportunity, not a franchise, and what could be better than having a business opportunity with a well-known company and brand name that provides valuable training & proven methods to make your business a success, without any franchise fees or restrictions?

Kayleigh & I

Mom & Daughter’s Shaved Ice ParadICE Team!

This opportunity will allow Kayleigh and I to work together as a team. My husband will also be in the business, when he’s not remodeling houses or working elsewhere. This is our chance to have our Family Food Truck Business! And the Snowie Bus isn’t just a Food Truck, it’s an attraction!

We will do fundraisers, birthday parties, weddings, showers, picnics, church events, family reunions, block parties, daycares and preschools, school events, school parties or sports (we will have Smart Syrups that comply with the Smart Snacks program in schools!), festivals and fairs, corporate events, employee appreciation days, sporting events and more!

The Snowie Bus is more than just a Food Truck, it's an attraction!

The Snowie Bus is more than just a Food Truck, it’s an attraction!

I have been diligently working on our Kickstarter Project to raise funds for the start-up of our business, and I have finally completed it! We are offering some amazing rewards for the financial support we will receive, including the reward for us to drive the Snowie Bus to you – at your home or office and serve you and up to 100 of your guests – FREE!

You can view all the rewards available and the project here.

If you want to help support us but are not able to financially, no worries! You can help us by spreading the word and sharing the project with others, especially if you know people in or around our area that would like to have us do their parties or events.

We appreciate your support!

Here are some pictures of the boys at Fuddrucker’s enjoying some chocolate chip cookies and playing with the stuff animal that one of Chris’s army buddies won from the game machine!

They are having a blast, although Alix appears to be a slight bit disturbed by the mess the cookies are making in his hand! =)

Elliot is having fun with his grandpa (Chris’s dad) playing with the stuff animal, and everyone is in good spirits, despite the fatigue from the road trip.

For the most part it was a fun and relaxing atmosphere, and we were grateful for the delicious food! This picture is of the front counter and the wonderful employees working there.

Delicious Chicken-Wrapped Asparagus Rolls with Tomato Slices

This has been very popular on my Pinterest board “Healthy Nutrition Tips” and “Yummy!” So, I did a little research and came up with a couple of recipes for this delicious dish.

Here they are:

Recipe # 1.) Chicken and Asparagus Rolls with Tomato

FOR YOUR INGREDIENTS YOU WILL NEED:

  • 4 boneless, skinless chicken breasts (6 to 8 ounces each)
  • Salt and pepper
  • 2 tablespoons of olive oil
  • 1 tablespoon of chopped garlic
  • 1 cup grated Asiago or Parmesan cheese
  • 2 beefsteak tomatoes, cut into 1/8-inch-thick slices (8 slices)
  • 8 spears of asparagus, trimmed, halved lengthwise, then crosswise

 DIRECTIONS FOR PREPARATION AND COOKING:

Preheat the oven to 375 degrees. With a sharpened knife, you’ll split each of the chicken breasts horizontally in half, and then you’ll pound the chicken between two pieces of plastic wrap until they’re about 3/8” inch thick (at this point, you should have 8 pieces flattened). Using salt and pepper, season the chicken on both sides.

Next, heat the olive oil in a large skillet over medium high heat. Working in batches, sauté the chicken breasts and the garlic until the chicken is a light brown only on one side, this takes about 2 minutes; then dispose of the garlic.

Then, you transfer the chicken into a baking sheet, with the browned side down. Using half the cheese, sprinkle the chicken pieces and then layer each piece of chicken with a slice of tomato and 4 pieces of asparagus.

Now, let’s roll up the chicken and secure it with a toothpick. Using the remaining cheese, sprinkle it over the chicken rolls and then bake the chicken until it is cooked through, approximately 15 to 20 minutes. When it’s done, remove the toothpicks and serve it hot with your favorite side dish!

FOR YOUR INGREDIENTS YOU WILL NEED:

  • 4 chicken breasts
  • 4 cloves of garlic, minced
  • 1 cup of mushrooms, chopped
  • 1 tablespoon of olive oil
  • 2 tablespoons of rosemary, chopped
  • 12 asparagus spears
  • Salt, pepper, onion powder, garlic powder, and paprika
  • Cooking string or kitchen string

DIRECTIONS FOR PREPARATION AND COOKING:

First, preheat the oven to 350 degrees. Next, sauté the garlic in the olive oil until it begins to brown. Then, add sliced mushroom and sauté for just a few minutes more. Remove this from the heat. Add the garlic, mushrooms and rosemary to your food processor and pulse it until it has a paste consistency. Set this aside.

  • Pound each chicken breast between two pieces of plastic wrap until they’re about 3/8” inch thick. Sprinkle the seasonings on one side of the chicken. Then, using about one tablespoon or so of your garlic, rosemary, and mushroom paste, spread it on your chicken breast, mainly on the center part of the breast, and you will want to use it all.
  • Next, put 3 asparagus pieces, placed vertically to help with rolling the chicken around it, on the chicken breast. Once this is done, roll the chicken around the asparagus and sprinkle with salt, pepper, and paprika.
  • Cover the dish with aluminum foil and bake it for about 30 minutes. At this point, remove the aluminum foil and continue baking for another 15 minutes. When the chicken is cooked through, remove it from the oven and serve it hot with your favorite side dish, perhaps artichoke?

Some fast facts about the health benefits and nutrition in asparagus:

  • To begin with, 4 spears of asparagus have only 13 calories, no cholesterol, no fat, and only 8 mg of sodium.
  • Packed full of vitamins, including vitamins A, K, E, and B6, and about twenty-two percent of the recommended daily value of folate, you can feel good eating these little spears knowing that you’re giving your body what it needs to help achieve optimal health!
  • While asparagus is virtually fat-free, it does contain a significant amount of omega-3 fatty acids.
  • The fiber in asparagus is where the fat-burning magnificence comes from. This fiber causes your body to burn more calories, and who doesn’t want that?
  • The vitamin B and folate in asparagus helps with keeping your cardiovascular system working properly. In addition to these vitamins, choline and pantothenic acid helps with regulating blood sugar because they metabolize starch and sugar.
  • Helping to combat certain illnesses like cancer, arthritis, asthma, and various auto-immune illnesses with the antioxidants that are in asparagus is another great health benefit.
  • Asparagus is also a natural diuretic, thereby utilizing the amino acid asparagine to help our bodies release fluid and flushing our bodies of toxins and salt.
  • You will also find the healthful benefits of minerals in asparagus, including iron, calcium, copper, potassium, and selenium.
  • Asparagus is also helpful in preventing premature aging and detoxing your body to prevent some age-related illnesses and in removing toxins that can compromise your immune system. The Vitamin C found in asparagus is one of the main parts of the antioxidants that are responsible for bolstering a healthy immune system and protects your body against various age-related illnesses.

In order to get the best benefits from eating asparagus, the spears need to be baked, broiled, stir-fried or grilled – or any other method of cooking that doesn’t require water. When water is used, some of the nutrients from the spears slip into the water and then you lose some of the beneficial nutrients.

Enjoy the recipes!
