I have had a passion and a dream for years of owning our own Family Food Truck Business and serving our community while making a decent living doing it. My family and I have talked at length about working together and they share this passion and dream with me.
My experience in the Food Industry includes working in an elementary school kitchen, multiple fast-food restaurants, being a night manager at Golden Chick, working at Cracker Barrel as a server and for On The Border as a Hostess and a Server. With my passion and experience, it’s a no-brainer that I should be involved in the Food Truck Industry!
Kayleigh started talking about wanting to find a part-time job to make some extra money, however, she is too young for a normal fast-food job and living in the small, rural town of Palmer, Texas, her other options for steady income babysitting and the like are limited!
That’s when I started thinking about ways we could work together so we could both earn some extra money. Since my job ended in February, things have gotten pretty tight to say the least, and I need a way to bring in an income without sacrificing my role as Kayleigh’s Learning Coach for her online schooling or valuable time with our family.
So, I began researching different options, including the Food Truck Industry, and I came across A Shaved Ice Opportunity with Snowie!

They are having a blast, although Alix appears to be a slight bit disturbed by the mess the cookies are making in his hand! =)
Elliot is having fun with his grandpa (Chris’s dad) playing with the stuff animal, and everyone is in good spirits, despite the fatigue from the road trip.
For the most part it was a fun and relaxing atmosphere, and we were grateful for the delicious food! This picture is of the front counter and the wonderful employees working there.
Recipe inspired by: Chicken and Asparagus Rolls with Tomato recipe!
FOR YOUR INGREDIENTS YOU WILL NEED:
DIRECTIONS FOR PREPARATION AND COOKING:
Preheat the oven to 375 degrees. Using salt and pepper, season the pork on both sides.
Next, heat the olive oil in a large skillet over medium high heat. Working in batches, sauté the pork chops and the garlic until the pork is a light brown only on one side, this takes about 2 minutes; then dispose of the garlic.
Then, you transfer the pork into a baking sheet, with the browned side down. Using half the cheese, sprinkle the pork pieces and then layer each piece of pork with a slices of tomato and 4 pieces of asparagus.
Now, using the remaining cheese, sprinkle it over the pork and then bake the pork until it is cooked through, approximately 15 to 20 minutes. When it’s done, serve it hot with your favorite side dish!
Chicken-Wrapped Asparagus Rolls
This has been very popular on my Pinterest board “Healthy Nutrition Tips” and “Yummy!” So, I did a little research and came up with a couple of recipes for this delicious dish.
Here they are:
Recipe # 1.) Chicken and Asparagus Rolls with Tomato
FOR YOUR INGREDIENTS YOU WILL NEED:
DIRECTIONS FOR PREPARATION AND COOKING:
Preheat the oven to 375 degrees. With a sharpened knife, you’ll split each of the chicken breasts horizontally in half, and then you’ll pound the chicken between two pieces of plastic wrap until they’re about 3/8” inch thick (at this point, you should have 8 pieces flattened). Using salt and pepper, season the chicken on both sides.
Next, heat the olive oil in a large skillet over medium high heat. Working in batches, sauté the chicken breasts and the garlic until the chicken is a light brown only on one side, this takes about 2 minutes; then dispose of the garlic.
Then, you transfer the chicken into a baking sheet, with the browned side down. Using half the cheese, sprinkle the chicken pieces and then layer each piece of chicken with a slice of tomato and 4 pieces of asparagus.
Now, let’s roll up the chicken and secure it with a toothpick. Using the remaining cheese, sprinkle it over the chicken rolls and then bake the chicken until it is cooked through, approximately 15 to 20 minutes. When it’s done, remove the toothpicks and serve it hot with your favorite side dish!

FOR YOUR INGREDIENTS YOU WILL NEED:
DIRECTIONS FOR PREPARATION AND COOKING:
First, preheat the oven to 350 degrees. Next, sauté the garlic in the olive oil until it begins to brown. Then, add sliced mushroom and sauté for just a few minutes more. Remove this from the heat. Add the garlic, mushrooms and rosemary to your food processor and pulse it until it has a paste consistency. Set this aside.
Some fast facts about the health benefits and nutrition in asparagus:
In order to get the best benefits from eating asparagus, the spears need to be baked, broiled, stir-fried or grilled – or any other method of cooking that doesn’t require water. When water is used, some of the nutrients from the spears slip into the water and then you lose some of the beneficial nutrients.
